Tasting:

Chilled before drinking. Clear, almost colorless with maybe a trace of wheat straw. Robust aromas of brown rice and fermenting yeast with glimmers of tropical flowers as it warmed. Silky smooth, dry and very assertive mouthfeel with a light to medium body. On the palate there were a myriad of flavors dominated by rich Oxydendrum honey, fresh baked sourdough bread, steaming beef broth and although the alcohol content was high you could sense it but not actually taste it. Each sip was concluded with quite a brisk finish that ended tart to almost bitter. We don’t drink Sake often and our last bottle Tamanohikari Super Premium Ginjo Sake was paired with seared tuna, but we both commented that this bottle, essentially paired without food, was nothing short of a FANTASTIC sipping wine!!!
