Synopsis, Our Opinion: A GREAT Sake

Producer/Winery: Yasuhiko Niida; Niida-Honke Co.; Fukushima, Japan.

Grape Variety: 100% Shizenmai rice.

Paired With: Garden salad with sesame oil dressing.

Tasting:

    Chilled before drinking. Clear, almost colorless. Strong Bartlett pear aromas. Smooth as silk, tart, dry mouth-feel; lots of pear, fresh cut apple, melon and vegetative flavors that continued all the way through the long finish. Although not acidic from a wine drinkers viewpoint, there was quite a lot of acidity that gave it a fresh snap. Fantastic paired with the sesame oil dressing on the salad, but equally good sipping alone after the dinner. We first it had this with Shrimp Gyoza at a Caviste/Krankies Sake dinner and both the Sake and food pairing knocked our socks off; but sipping it quietly at home with other tastes I think it was equally good. The sesame oil on the salad made the Sake even more rich and complex. It was very refreshing and simply a GREAT Sake we really enjoyed…it provided a whole new wine drinking experience and we strongly recommend it!!!
