Tasting:

Prolog: Not long ago we had an Undercurrent Restaurant Wagner Family Virtual Wine Dinner. The three course dinner cost $150 that included dinner for two and three bottles of Wagner wines. The food came with detailed heating and plating instructions and was simply OUTSTANDING. The following is a review of the wine served with the third course.

Opened 90-minutes before drinking. Opaque, dark ruby color with a light gray tinted rim. Very faint blackberry jam and oaky vanilla aromas. Slightly surprising (after the light aroma), satiny and juicy mouthfeel, full body and a 80-grit texture. Blackberry and current flavors. Lots of edgy acidity, extremely soft tannins and a medium-length succulent fruit finish. Wow, it was somewhat dry, fleshy, cottony and California bold…how’s that for Cabernet characteristics??? It was not bad paired with the food, but in the end we called it a well-oaked and fruity California Cabernet Sauvignon.
