Chef John Bobby
The Caviste wine dinners are held about once a month, year round, each one featuring new and exciting foods and noteworthy wines that are far from ordinary fare. This month Chef Bobby, Executive Chef at Noble’s Grille and recent winner of the Fire In the Triad Competition Dining Series (a North Carolina chef competition), prepared a dinner that included antipasti pared with Montasarra Cava, the delicate and light Spanish equivalent of champagne; grilled cotechino with Hermann Riesling
Cotechino
Urziger Wurgarten Kabinett that was many people’s favorite; and smoked duck legs with Quinta do Crasto Duoro Superior, a very fruity wine from Portugal. The smoked duck legs were to die for!!! And…the wine was an absolutely wonderful pairing. The fourth course featured a most unusual shredded lamb dish paired with Chateau Musar Gaston Hochar, a wine produced in Lebanon and well known for its highly perfumed bouquet, rich berry flavor and long finish…it was truly a MEMORABLE wine and noteworthy pairing. A goat cheese tart with salted orange, lemon caramel, and toasted almonds was paired with Broadbent Madeira 5 year Old Reserve to complete the sumptuous dinner and make us into Madeira lovers.

Bartholomew Broadbent
Bartholomew Broadbent, of Broadbent Selections in San Francisco, presented the background on each wine. His personable speaking style, sense of humor, and depth of knowledge enriched the enjoyment of each wine as well as adding to the fun of the entire evening…and in addition to that, his wines were all OUTSTANDING!!! Host Russ Anderson, Chef Bobby and the wait staff at Noble’s Grill did an great job of creating an unforgettable evening. These monthly events are something to look forward to as they always enrich our wine pairing experience. If you’er in the Triad area of central North Carolina don’t miss an opportunity to join one of these wine pairing dinners.
