Paired With: Fish tacos using tilapia fillets flavored with creole seasoning and accompanied
by jicama slaw, and green salsa made with cilantro, onion, garlic, tomatillos, jalapeños and avocado.

Tasting:

    Chilled before opening. Clear, almost colorless, with just a tint of oat straw color. Energetic ripe apple and pear aromas, but with a whiff of citrus. Smooth entry, medium weight polished body with a very slight hint of creaminess. Bracing tart apple and lime flavors that had just the slightest glimpse of apricot, crisp acidity and a very long dry finish that’s full of dusty tastes. Fantastic paired with the fish and excellent drinking without food. We would have said this was a dinner to pair with beer, but the Chenin Blanc was perfect. Unique in that it starts light and fruity (tart apple and sweet apricot), but finishes very differently with dry, dusty, almost bitter tastes. Delicious, fresh and LOTS of complexity in this bottle. A SPLENDID dry Chenin Blanc and another Matt Bayless wine selection…that was a “best buy in the store”.
