Synopsis, Our Opinion: It was A VERY SPECIAL white Burgundy and we treasured every sip.

Paired With: Grilled swordfish seasoned with butter, thyme, oregano and rosemary, salt potatoes and roasted broccoli and carrots.

Tasting:

    Chilled before drinking. Wheat straw color. Delicate citrus, green apple and pear aromas with whiffs of fresh cut green grass in the background. Light, dry and very approachable, medium body and 200-grit texture. Strong tart citrus, fresh cut apple and limey mineral flavors, gobs of crisp acidity that carry it through a long mineral dominated lively finish. WOW we’ve been drinking OUTSTANDING California Chardonnay for months and this Chablis really stands out and sets a standard of its own. Crisp, flavorful and a MEMORABLE white Burgundy. Now for the punchline…it was “quite” expensive, but clearly a very special Chardonnay and within that opulent stratosphere it’s very subjective, but we call it Four Thumbs Up because the quality was so outstanding, we both said it’s about as good as it gets at this price point. We loved it with the swordfish and we loved it sipping after the dinner. It was A VERY SPECIAL white Burgundy and we treasured every sip.
