Tasting:

He said: Opened one-hour before drinking. Opaque, very dark dusty garnet color. Very strong barnyard aromas. A robust taste with lots of fruit (predominately plum and raspberry), smoke, damp earth, lots of pepper and strong tannins. It finishes dry and tart with fruity leather and mineral flavors and a very slight bitter ending. This is a triple WOW wine. Spectacular Syrah from the bouquet all the way through the full body dry finish. From the first sniff I knew it was going to be GREAT. Not a good pairing with the tomato in the bolognese sauce (See Vicky’s description of our disappointing pairing) but an OUTSTANDING wine drinking alone. My description is from drinking the wine alone after dinner. We had originally had this at a Caviste wine dinner paired with a lamb dish, and it was simply a breathtaking combination. The marinara sauce in our Lamb bolognese has been boiled down pretty far so it’s more tomato than wine. We sure learned a good pairing lesson tonight that we will not forget!!!

She said: This pairing was a GREAT example of what should not happen and how a pairing can ruin a good wine. We started off with a strong barnyard aroma and flavor and they were remained throughout the tasting. As we had the wine with dinner the body was light and the tannins were lost and I questioned Ray about the origin of the wine. Being assured that we were indeed drinking Syrah, I charged through the dinner and was delighted to find that everything but the aroma and taste had changed. No kidding, a full body emerged and tannins found their way in to tantalize the palate. Long tasty finish too. Yum!!! The moral of the story is don’t have a Syrah with a tomato based dinner even if it’s lamb. This was a wonderful Syrah but a very bad pairing.
