Paired With: North African chicken tagine with couscous pilaf

Tasting:

    Chilled before drinking. Clear, light wheat straw color with a tint of green. VERY, VERY fragrant mixture of lavender and American Witch-hazel (Hamamelis virginiana) aromas. Silky smooth mouthfeel, dry (not a sweet wine), medium body and a 400-grit texture. Tart lemon and a powerful underlying soft (high pH) mineral taste. Crisp acidity and a long citrus and honey tasting finish. WOW, this wine was SPECTACULAR paired with the aromatic spices and apricot in the chicken tagine dinner, the food dove-tailed perfectly with the floral, citrus and mineral flavors in the wine. The pairing was so spectacular we would say it’s especially critical to pair it with the right food so you don’t miss a special symbiotic relationship of wine and food. This was unique, rich and complex aromatic wine that exudes a huge amount of unusual intensity. Every sip revealed additional tastes. It’s a wine with fantastic fragrance and a unique mineral character that can only be called Outstanding!!!
