Tasting:

He said: Slight chilled before drinking. Opened the night before and recorked. Dark golden color with a concentrated amber tint. Heavy damp bark, hay that was bailed to green, blooming honeysuckle and butterscotch aromas. Smooth, quite heavy, almost syrupy, yet VERY fresh mouth-feel; plush honey, almond, and apricot flavors with an enriched intertwining gingery undertone and a finish with tartness and sweet highlights of honey. WOW,WOW,WOW this is a dessert wine that really sets the bar high…it simply has it all, depth beyond compare, complexity, perfectly balanced sweetness and acidity and an elegant character from start to finish. MEMORABLE Sauternes-Barsac.

She said: Clear, dark golden color. Smooth, sweet, savory and full of honey and spicy tropical fruit flavors, the wine was a perfect pairing for an apple dessert. The flavors and acidity were very complementary to the pure baked apple taste, adding enough acidity to cut through the sweetness and whipped cream. Yum, this was a very special treat and I can’t wait to have it again.

Botrytis cinerea the originator of noble rot which is the critical key to the elegant Bordeaux Sauternes
