Paired With: Salmon with pasta and green peas in Parmesan cream sauce.

Tasting:

    Chilled and Opened 30-minutes before drinking. Slightly cloudy, dark golden color. Very light whiffs of apple cider, citrus, Mock Orange (Philadelphus virginalis) blossoms and slight yeasty aromas. Very smooth creamy mouthfeel, dry, 200-grit texture and a solid medium body. Apple, Florida grapefruit, lemon, quince and honey flavors. Crisp acidity and a long tart apple and mineral tasting finish. On the first taste we both commented that it tasted slightly like an “Orange Wine”, but once we got into it the flavors of the wine dominated. It was well-balanced, savory and scrumptious. As it warmed sipping after the dinner flavors of raisin, tarragon, fennel, licorice and bitters arose. The slight oxidative taste stayed with it from start to finish, but the resulting nuttiness really added a great deal. Unusual and noteworthy Northern Italy white.
