Chilled before drinking. Clear, but with a tiny tinge of cloudiness, oat straw color. Light ripe apple, ocean salt spray and sweet spice aromas. Bone dry, dusty, bitter and very slightly orange wine-like mouth feel, medium body and 150-grit texture. Apple, salty mineral and bitter grapefruit flavors. Although not very acidic there was enough to call it fresh acidity and a very long bitter finish with a salty mineral aftertaste that goes on and on. Unusual white wine, little fruit, lots of mineral and a strong bitterness from start to finish. All this may sound negative, but it’s actually quite an enthralling wine. After the first few sips we thought it was just a garden variety Mediterranean white; However, as it warmed we discovered a wide range of tastes and it really grew on us. Outstanding paired with the chicken and pesto sauce and a very enticing sipping wine after the dinner. This was one of the most interesting wines we’ve had in a long time and in the end we called it a tantalizing Canary Island white.
