Tasting:

Chilled before drinking. Clear, very pale wheat straw color. Lemon, other citrus and distinctive Opal apple (Malus domestica ‘Opal’) aromas with hints of jasmine blossoms. Smooth, dusty, lush, light body and a 400-grit texture. Strong flavors of tart lemon, cooked Kieffer pears, nectarine and mineral water from a spring. Lively acidity, and a long off-dry, tart lemony tasting finish. It really came alive paired with the omelette and fritters, but was excellent sipping wine too. Delicious, fresh and with just enough mineral taste to make it distinctive.
