Tasting:

    Opened one hour before drinking. Just over the edge of being clear, dark purple color with a light purple rim. Strong earthy plum, strawberry and Cab Franc green pepper aromas. Silky smooth entry, concentrated medium to full body and a 200-grit texture. Lots of plum, strawberry, cherry and sage flavors all mixed in with an energetic mineral taste. Well balanced fresh acidity, structured tannins and a slightly bitter fruity and mineral finish. Excellent with the venison flavors and as we sipped the last pour after the dinner we both commented that this was a very elegant and refined Cabernet Franc. The combination of fresh mouthfeel and intertwining fruit and mineral really made this wine unique and special. We liked the Thierry Germain Les Roches Saumur Champigny 2016, but the limey mineral in this made it distinctive. At only $23 this wine was an incredible value!!!
