Paired With: Seared salmon with orange curry sauce, rice and peas.

Tasting:

    Opened one hour before drinking. Clear, ruby color with a slightly lighter rim. Rich earthy aromas with ripe cherry, mushroom and dried brome grass hay highlights. Silky smooth, sumptuous mouthfeel, dry, 200-grit texture and a medium body. Dominant fresh red cherry with secondary cranberry and very ripe raspberry and a touch of cinnamon flavors. Edgy acidity, light well integrated tannins and a long fruity finish. WOW, “PERFECTLY” balanced and velvety. It was elegant with just a touch of rustic character. Wonderful paired with the seared salmon and equally delicious sipping without food after the dinner. We enjoyed it very much and it made the dinner special. Expensive, but VERY DELICIOUS Pinot Noir.
