The wine undergoes 100% barrel fermentation and ages for about 16 months in 80% French Oak and 20% USAn Oak from which 50% are new. All yeasts are wild and 2004 marked the first year ever to be harvested so early. As a result, the wine shows a clear, very bright yellow green color. The aromas are very fresh with notes of minerals, peach and mint. The wine expresses a delicate, fresh touch in the mouth with flavors of grapefruit and pineapple in the finish. The excellent level of acidity gives a great balance to the wine that finishes on a smooth note.
