CABERNET SAUVIGNON
2001 Vintage - BLIND TASTED in March 2006 Hillside Select
|
Hervé Pennequin This cuvée represents a selection of the best four blocks (Sunspot, John's Folly, Venado Illegal and Rattler) of the Hillside vineyard surrounding the winery in the Stags Leap district. The monovarietal Cabernet Sauvignon spent 32 months in 100% new French oak barrels (from 60 gallons to intensify the extraction of the oak). The color is almost opaque, very intense core with purple hues. The nose is extracted with lots of aromas of black cherry, blackberry, cacao, fresh tobacco leaves. Very long and persistent, the nose evolves in the finish on delicate spices aromas with a touch of vanilla that lights the wine. On the palate, this is all about extraction; although, the smooth tannins are not aggressive, show a lot of silkiness and velvety. A long finish characterizes a racy bottling and an excellent balance.
