Bolgheri DOC, covering 900 hectares of vines, is situated in the province of Livorno of Tuscany and lies roughly halfway between Livorno in the north and Grosseto in the south, just inland from the Mediterranean.
The area is subject to Mediterranean climatic conditions, but with the influence of cooling breezes off the sea.
The natural landscape affords protection against extreme weather in winter. Considerable variations between day and night temperatures ensure development and maintain acidity.
In 1993, a study was carried out by Professor Attilio Scienza, Facoltà di Agraria Università Statale di Milano of the Bolgheri soil structure revealed 50 – 60 different, composite soil varieties in the different geographic zones of the appellation, which are explained by the encounter between soil layed down by the Tyrrhenian Sea and the autochthonous land.
In a few words, the soil basically contains pebbles, both round and irregularly shaped stones of various sizes with, sandy and /or clay origins. A layer of Pliocene Era clay, with sand and mud imbedded in small shards, appears in certain places. Some bright red sandy soil, in some places interspersed with pebbles.
At the same time, finer limestone soils are broken up by large rocks of river bed sediment origin. Elsewhere, almost pure clay occurs with practically no calcareous elements.
However, 5 different zones have been researched and clearly show the limit between the hills and the plains. All vineyards are between these plains and hills ascend up the hills on slopes. All along the coast the soil is principally sandy, with red sand and sea sand.
The hills have clay soil, with the northern part being a mixture of sand and clay. The soil of Sassicaia also contains iron dioxide and stone, ideally suited to Cabernet.
A major effort has been made to adapt the grape variety used to the composition and character of the soil, in order to assure the best possible quality of wine. Although Bolgheri comes to mind as one of the younger quality wine producing areas, this is deceptive and a brief look at the pioneers and their continued success will rectify this misconception. Sassicaia is the fruit of a dream of the Marchese Mario Incisa Della Rocchetta, to produce noble wine in this part of Tuscany.
He first started at Castiglioncello, in the 1940s, planting Cabernet Sauvignon and later, other Bordeaux varieties, but this was really made for home consumption.[Please note that we were most graciously received by the Marchese Mario Incisa Della Rocchetta and that we tasted his wines with him. Detailed notes of these wines will also soon appear on www.tastedonline.com]
However, with time and experience in the area, the wine improved and in the late1960s received praise from relatives, the Antinori family, and visiting guests. The 1968 vintage was launched on the world market, in the early 1970s, with raving acclaim. Once the wine from Bolgheri gained success, because of its excellence and the high price that it fetched, others ventured to invest. Properties like Grattamacco and Ornellaia were created along the same lines.
The unique microclimate, the specific soil and the coastal influence continued to attract interest, other wineries were founded and Bolgheri started to organize its blossoming wine industry. A number of very well known names such as Marchese Piero Antinori, Angelo Gaja and Michele Satta followed, but many more, equally enthusiastic, if lesser known winemakers, continue the dynamism of Bolgheri.

The rules and regulations appertaining to the appellation of controlled origin of “Bolgheri” wine was approved, by presidential decree on August 1st 1983, and entirely replaced by a decree, which became valid as of the 1994 vintage.
As to be expected, the extremely complex law, has been amended and allows for derogations under certain conditions. Suffice it to say that the “Denominazione di origine controllata dei vini Bolgheri” is reserved for white, red and rosé wines, Vermentino, Sauvignon and “Vin Santo Occhio di Pernice” which correspond to the conditions and requirements as set out by the law.
DOC White Bolgheri is reserved for wine obtained from grapes produced in a vineyard belonging to a specific domain and proprietor and with the following composition : 10–70% Trebbiano Toscano, 10-70% Vermentino, 10-70% Sauvignon, allowing a maximum of 30% of other white grape varieties grown in the province of Livorno. DOC Bolgheri Vermintino has to contain a minimum of 85% Vermentino grapes, with the addition of up to 15% of white grape varieties grown in the “Regione Toscana”. The same rule applies to DOC Bolgheri Sauvignon.
Red and Rosé wines, carrying DOC Bolgheri, have to abide by the same rules of origin and proprietorship. The blending possibilities are as follows: 10-80% Cabernet Sauvignon, up to 70% Merlot and up to 70% Sangiovese.
Red grapes recommended and/or authorized, in the “Regione Toscana”, may account for up to 30% maximum of the blend.
As for the DOC Bolgheri “Vin Santo Occhio di Pernice”, it is to be made with 50-70% Sangiovese and 30-50% Black Malvasia, from the same geographic origin, proprietorship and the same property with the same proviso for the addition of 30% of other grape varieties from recommended and/or authorized red grape varieties.
DOC Bolgheri Sassicaia is reserved for wine made from grapes originating in the specific sub zone and from the domain belonging entirely to this company, with at least 80% Cabernet Sauvignon and up to 20% maximum of other red grape varieties from the recommended and/or authorized list of vines from the “Regione Toscana”.
The lines which delimit the appellation of Bolgheri are very strictly drawn and controlled. They encompass only the administrative territory of the “Comune di Castagneto Carducci”, in the province of Livorno, with the exception of the permitted land situated West of the ancient road way, Via Aurelia. That of Bolgheri Sassicaia is also defined with precise exactitude.

The decree not only limits the number of vine stocks per hectare, but also indicates the maximum production in Kg. per vine. In exceptionally flourishing years, 20% more than this fixed annual production may be produced, but subjected to an even more scrupulous selection of the grapes.
Any excess production may not carry DOC Bolgheri and is declassified. In order to be classified DOC Bolgheri Superiore, the yield must not exceed 80 quintal per hectare.
White Bolgheri, Vermentino and Sauvignon have to achieve a minimum natural degree of alcohol of 10%, the red and rosé 11% and Bolgheri Superiore 12%.
The site of vinification, transformation, cellaring and maturing is also strictly controlled and has to take place within the delimited area of the appellation. Rules also apply to the time each category of wine must spend in wood, how long a period in oak barrel and how long in bottle before being put on the market. If fact, everything is done to provide the ideal procedure for producing top quality wine in this fascinating part of Tuscany.
2005 VINTAGE
After a winter with low average temperature and snow, the vegetation began its growth about 12 – 15 days later than in 2004. The good weather in spring advanced the process and the vines developed 10 days earlier than in previous years. June and July were sunny and warm, with only limited rainfall. August was cooler than usual, with average temperatures of around 24°C and plenty of rain during the period leading up to the 15th. Some rain during September, but the sea breeze helped to dry the grapes.
Although these factors affected ripening, and subsequently the harvest, the grapes were healthy and ripe with good potential at the time of harvest. The level corresponded to that of recent vintages of Bolgheri.
Those producers, who were brave and decided to postpone the harvest, waiting for perfect ripening, had the best results. The Merlot was picked in early September, whilst the Cabernet Sauvignon and the Syrah were harvested in mid – September. The white varieties developed intense and fruity aromas.
2004 VINTAGE
One of the most regular climatic periods of the last two decades, that is to say, a « normal » year with near ideal conditions. Winter was characterized by an excellent relationship between rain and low temperatures, but without excess. Spring brought regular, but not diluvian, rain particularly during April.
It provided sunny days alternating with more cloudy periods. The bunches of grapes were carefully thinned in order to ensure quality after the excess of fertility caused by the heat wave in 2003. Summer was perfectly sunny with hot, but not excessive, weather.
These factors ensured that all the grape varieties developed homogeneously, slowly and regularly. The vintage started at the beginning of September for the early ripening red grapes, such as the Merlot, and continued until the end of September or the beginning of October for the Cabernet Sauvignon, well in advance of the first rainfall.
In 2004, of all the months of the year, October had the most rain – almost 140mm.It is significant to note that all the grapes, but particularly the white grapes attained an excellent level of aromatic maturity due to the regular climate of 2004, notably thanks to the considerable, very positive and successive thermal differences between warm – to - hot days and cool - to - chilly nights.
2003 VINTAGE
A rigorous and rainy autumn and winter allowed the water table to replenish. However, spring and summer were amongst the driest and hottest over the last several years. The high spring temperatures ensured excellent budding for all grape varieties, followed by optimal conditions for flowering and the setting of the bunches.
During summer, very high temperatures provoked early sugar maturity in the dry areas amongst early ripening grape varieties. This caused problems with achieving total phenolic maturity.
The best wines are from the cooler areas and from soil with high clay content. During the vintage, the difference between day and night temperatures became more regular and, in several cases, promoted total phenolic ripening. In general, the wines are powerful and show the presence of a great deal of sun. They have good concentration and higher degrees of alcohol.
