Paired With: First Course: Chilled grilled scallop and salmon, squid ink tagliatelle, asparagus, peas, heirloom tomatoes and Mexican mint marigold garnish for the salmon and preserved Le,on Kefir lime dressing.

Tasting:

    Note: For Mothers Day the Undercurrent Restaurant had a delicious three course virtual dinner served with three different wines. This wine was served with the first course.

    Chilled before drinking. Clear, almost colorless. Very light lemon and green herb aromas. Dusty, unsettled mouthfeel, light to medium body and a 150-grit texture. Lemon, green melon and apple flavors. Medium acidity and a long tart grapefruit finish that had an edgy mineral taste. Maybe lacking in bouquet, but it paired well with the dinner and was refreshing and delicious. We were taken by the non-traditional tastes of this Sauvignon Blanc; however, the light, almost non-existent bouquet really was a disappointment. Because it paired so well with the first course of the dinner we called it a pleasant Napa Sauvignon Blanc.
