Yoichi Sato
Sommelier
Born in Tokyo, 31/12/1962, Youichi was also schooled and went to University there. He worked in a Paris restaurant, in 1988 and turned to Sommelerie from the end of that year.
He did the tasting course of the Paris Sommelier Association and worked with Fauré-Brac in the Bistrot des Sommeliers. In 1990 he returned to Japan and worked at the Enoteca Pinchiorri in Tokyo and then for the Taillevent- Robuchon, also in Tokyo. He opened his own restaurant, MAXIM, in 2000.
In October 2005 he became the “Best Sommelier in Japan” and in 2007 he will be one of the favourite candidates for the “Best Sommelier in the World” competition, in Barcelona.
